  Pear Cornmeal Bread

 

1 1/3 cup flour

2/3 cups cornmeal

1/2 cup brown sugar

1 tbls baking powder

1/2 tsp cinnamon

1 tsp baking soda

¼ tsp salt

1/3 cup raisins

1/2 cup nonfat buttermilk

2 eggs

1 egg white

3 tbls melted butter

1 ½ cups ripe pear diced

 

Pre heat oven to 375

 

Coat loaf tins with cooking spray

 

Whisk the above ingredients, flour thru salt in a medium bowl. In a second bowl whisk together buttermilk thru butter. Stir the buttermilk mixture in with the flour mixture. Stir in the raisins and pears until combined. Spoon batter into loaf pans and bake for 40 minutes or until firm to the touch and when toothpick inserted comes out clean. Cool loaves on wire rack.
